4 c. rhubarb chopped
1 c. sugar
2 c. water
Place rhubarb, sugar, and water into saucepan. Bring to a boil, then turn down and let simmer for 15 minutes, until syrup is bright pink.
Pour 1/4 cup syrup over ice and top off with club soda for a refreshing summer drink. This syrup is also great mixed with vodka and lime juice for a delicious cocktail.
