My family lives off this salad all year long, but it is best when you can get the arugula right out of the yard.
2 hand fulls of Arugula
Pecorino Romano cheese
1 clove garlic
2 glugs of extra virgin olive oil
salt and pepper
Wash the arugula. Grate cheese,and mix with arugula in salad bowl. Make dressing by squeezing 1/2 lemon and adding 2 glugs of oil and pressing one clove garlic. Mix well and toss with salad. Add salt and pepper to taste.
