This recipe comes from my canning class at the Canning Connections on Beacon Hill. Can’t wait to try the ginger quince vodka cocktail I also heard about in that class. I just made mine so it will be ready for New Years.

4lb quince cored and chopped
1.5 litters medium grade vodka
1 gal. jar with lid
Put chopped quince in food processer and chop fine. Place chopped quince in jar and pour vodka over to cover fruit by 2″.
Shake and sit on counter for 6 to 7 weeks. Shake daily. Strain and drink on rocks or in cocktails. Yum!
Thanks for chopping the quince, Jean Galton.
